Vanilla sponge cakes

 

All of my vanilla sponge cakes use the same base recipe that I've been using for years. This makes 24 cupcakes or 1 celebration cake:

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup milk
  • 1.2 cups self raising flour
  • 1.3 cups plain flouri

 

Chocolate Sponge Cakes

 

I have a go-to recipe for chocolate sponge cakes too. This would make 24 cupckaes or one celebration cake:

  • 2 cups sugar
  • 2 cups plain flour
  • 1 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 12 tablespoons milk
  • 12  tablespoons vegetable oil
  • 2 teaspoons vanilla 
  • 1 cup coffee

 

Pound Cake

 

I use a standard pound cake recipe when making a lot of loaf cakes. This is the base:

 

  • 3 eggs, weighed in their shells
  • Equal parts Self raising flour, butter, sugar to match the weight of the eggs
  •  
  • FirForFo

For example, if the eggs weigh 210g in their shells, you use 210g butter, 210g sugar and 210g Self Raising Flour in the cake mix.

 

This is ideal to use for things like lemon drizzle cake (add lemon juice, rind), Raspberry and White Chocolate Cake (add raspberries, white chocolate) etc.
